On the menu: Mock Chicken Pot Pie

I’m going to be honest for a minute. This was supposed to be a stuffed biscuit. I made the dough, made the filling (my own special concoction of cream of onion, yellow bell pepper and garlic salted, pan seared chicken) and then went to put them together. The thing about biscuit dough, however, is that it’s highly hydrated and extremely sticky. Completely unworkable, actually. Instead, glopped as much of the dough as I could get off my hands and the rolling pin and the breadboard and tried to spread it out… only to have more of it stick to my hands. It was ccompletely untenable.

I got the dough on the baking pan (the only thing it wouldn’t stick to, actually) and just kind of… gave up. I poured the the filling on top, to make sort of a biscuit pizza. I threw it into the oven for the prescribed time and pulled it out of the oven….

It looked like vomit on a pan.

HOWEVER. I plucked it off the pan (didn’t stick there), got it on the plate (seen above) and ate it and…. not bad at all! It tasted like a chicken pot pie! The biscuits turned out great! They were light and fluffy and crispy on the outside. The filling tasted delicious and flavorful. Would I serve this at dinner parties? No. Would I try it again? Maybe!
