I got a new phone, which means higher resolution images when it comes time for an on the menu entree. This one is a good one! It’s pasta with some green beans, celery and sun dried tomatoes. The tomatoes are vital to this, because they are seared in olive oil, which infuses the flavor of the tomatoes into the oil. After that, throw in a bit of Italian dressing to really boost the flavor and you have something.
The sun dried tomatoes really worked because they were seared and made a little bit more pliable. They were edible, which has been a problem with me and sun dried tomatoes before.The only thing I missed was the peas, because mine were frozen solid, but I don’t think I lost much on the dish as a whole.
The best part was the leftovers. The noodles and the veggies marinated in all the juice, and it really helped kick the flavor up a notch. Sometimes that’s all cooking takes to make it better. Just be patient.
