I am ok with admitting that the tuna cakes look awful. The do. I will say that further on, when I had more tuna cake…batter?, I left them on the heat longer, and they started to look edible. They tasted fine, I want to make that clear. They just looked a little rough, and maybe a bit like vomit.
The red beans were the longest to prepare. They took 5 hours so simmer and take on some moisture and the flavor of lemon juice and onions. I eventually added some other seasoning and included tomatoes to finish them off and topped them with some colby cheese. The beans ended up with a little more heat than I was expecting, but that wasn’t a bad thing. All in all, it was a complete meal, which is nice. Of course, I will feel bad reheating fried tuna in the Real Job Inc. microwave.
