On the menu: Baked sole

After I did the show on Friday, I came to find out that the grocery store would not be getting any sole delivered that weekend, due to the hurricane out east. Fortunately, there were two small fillets left. They held them for me, and I went and bought $2.50 worth of fish fillet. It was plenty, actually.

The sole was essentially marinated in citrus, coriander and onions, and to finish it off, a breading of cheese and ground flaxseed. I probably used too much flaxseed, and it dominated the texture, but it didn’t interrupt much of the flavor. It was a strange mix of ingredients, but it was altogether inoffensive. I feel like there were some refinements I could have made to perhaps make it cleaner but I don’t think the flavor was influenced greatly. Next time, I am leaving the breading off.

(Sidebar… I spilled some flax all over my computer. How many of you can say that?)
