First of, sole is a fish, if you didn’t gather by the “fillet” part. It is not the bottom of your shoe, which would not taste very good, even sauteed with garlic and onions, dusted with paprika, oregano and pepper. Sole the fish, on the other hand, responds quite well to those things. It was finished off with some tomatoes.
The thing about sole is that it is a flat fish, so the fillet isn’t very firm or solid. Trying to flip it, the entire fillet fell apart on me, so it turned into a stew like mixture rather than a nice even fillet. It didn’t affect the taste, which was very good. I think I’m becoming a pro at the cooking of fish.
On the side, my lovely girlfriend supplied some green beans and potatoes. It really completed the meal, and everyone was happy. See?
