On the Menu: Grilled Sole, asparagus and ginger rice

I fired up the grill for the first time on Tuesday. The grill is so much fun. You’re cooking outside! You get to light a fire! Just awesome.

The problem with grilling, of course, is that you can’t actually regulate the heat. It led to some dried out fish, but for some reason, that was perfect. It was a citrus-y delight that was probably healthy. I went with sole because it’s a mild fish that would take on the flavor of the lemon/soy marinade. I was going to get tilapia, but they were out. Instead, they tried to sell me on salmon, which is expensive and intrinsically flavorful. Opposite of what I was going for.

I usually love me some asparagus, but this variety wasn’t great. It was seasoned with lime, primarily, and that came on a tick too strong. I like my asparagus buttery and a bit salty. Better luck next time.

The rice, though, that was the best. It was instant rice, but the water also had honey, soy sauce, ground ginger and pepper, and then was cooked with snow peas. AMAZING. It was extremely moist, with a sweet slightly gingery flavor. It was easy to make and could definitely be used as a side going forward, with just about anything.
