On the Menu: Sauted escarole with garlic and cannellini beans

IMAG0180I am really surprised at how good this tasted. If you don’t know what escarole is, it’s basically lettuce. Fancy lettuce that comes in a leafy bunch. Basically, to infuse the greens with the garlic flavor, you sear the garlic in olive oil before sauteing the greens with the garlicky olive oil, salt and pepper. Cover and cook for about 5 minutes, and it is extraordinarily flavorful. Not what you expect from wilted greens. The beans, I thought would be obtrusive, but they really weren’t. The mimicked the flavor of the escarole and added a little substance and protein, which made it closer to a real meal, and made it OK that I burned the hell out of the fish fillets.

It tastes good, it was pretty simple to make and it was very healthy. All in all, a winner.
