On the Menu: Spanish Rice Frittata

Frittata, as far as I can tell, is Spanish for “fancy baked omelet” It’s sort of an egg bake, but not really, and it’s sort of an omelet but not really. It has all of the components of a good veggie omelet. Peppers, cheese, eggs, tomatoes. Except I included rice (duh) and salsa, then I threw it into an oven, which sounds like an egg bake. Still, there wasn’t much egg compared to vegetables, and usually in an egg bake, the starch is pasta and not rice.

I don’t know, but this is the perfect dish for making once and then having leftovers. Nothing that spoils or doesn’t last in the fridge for a day or two, easy to portion out for meals at future dates, and pretty good for you to. Also, I don’t know if I have ever noted this before, but boy do I love rice.
