On the Menu: Tomato, basil and broccoli chicken

I admit, I was terrified by this one. Why? Well, I didn’t exactly use the safest defrosting method for the chicken, but I only found out after I had it in the mix. The good news is, I’m not sick! The better news is, it tasted great!

I cooked the chicken with Rice-a-Roni (the San Francisco treat) of the chicken flavor, so there wasn’t much “cooking” on my end. It was pretty easy, is what I’m saying. Ater it was almost done cooking, I threw in some tomato and broccoli. The tomato in this one was clutch. After a thick, hearty dish with the rich and creaminess and starch, all mixed in with chicken and some earthy broccoli all topped with cheese, it was nice to get a bit of fresh acid to bite through the heaviness.

As long as you have fresh chicken, and make sure to practice safe cooking practices, I highliy recommend this one!
